Soir Désir is a characterful white from Roussillon, built around local grapes: Macabeu, Grenache Blanc, Grenache Gris and Carignan Blanc. The fruit comes from clay and limestone soils, farmed biodynamically (though not certified), and is vinified with a light touch and very little sugar left in the wine.
Each variety is pressed directly and aged separately: Macabeu and Grenache Blanc in a large wooden foudre, Grenache Gris in a concrete tank, and Carignan Blanc in small oak barrels. After about nine months of ageing and a short rest in bottle, everything is blended, giving a layered and expressive wine.
In the glass you can expect ripe citrus and yellow fruits (lemon zest, pink grapefruit, quince, pear), delicate notes of honeysuckle and pine, and a slight biscuit tone. On the palate it feels rich yet fresh, with a gentle salty edge and fine grip. Serve cool in a large glass and enjoy now or over the next few years.
