This is a 100% Aligote from vines in 75% Hautes Cotes de Beaune, 25% Chassagne-Montrachet. The vines are 45+ year old which located in very cold sites with clay and limestone terroir. Using only indigenous yeast, it was fermented and aged in older 350L barrels for 14 months + 3 months in stainless steel. Unfined and unfiltered
