Minerally on the nose and mouthwatering on the palate, this polished Champagne offers a plush, satiny mousse carrying flavors of pear, apricot and Marcona almond, with a touch of preserved lemon and a salty underpinning that lingers on the finish.
Creamy, awake and in love, that's how we feel every time we get to pop a bottle of Doyard's "entry level" wine. It may be entry entry level pricing but its complexity and structue far outpace its price point. The blend is mostly from Vertus, along with parcels in Le Mesnil-sur-Oger Grand Cru, Oger Grand Cru, Avize Grand Cru, and Cramant Grand Cru. Only a touch of the blend goes through malolactic fermentation, surprising due to the mouth-coating texture, but that is probably due to 40% of the wine aging in small Burgundy barrels before it sees a whopping 5 years on the lees!
